1 pie crust – buy or make
5-6 Peaches (sliced)— no need to peel them – and toss them with a spoonful of flour, no need for sugar, maybe some nutmeg or cinnamon, a splash of amaretto if you are feeling fancy, or vanilla, maybe some blueberries- give it a good toss
Roll the pie crust out into a good sized circle – about 12”
Put it on parchment paper on a cookie sheet then dump the peaches in the middle and spread them a bit leaving a good 2” of crust on the edge.
Fold the edges of the crust up over the filling leaving the center open, if you are feeling fancy brush the crust with an egg wash (one egg beaten with a teaspoon or so of water) and sprinkle with sugar or cinnamon sugar.
Bake at about 425 for about 35 – 40 min until brown and bubbly!
